Ingredients

  • 12 oz Pork chorizo sausage, removed from casings
  • 16.5 oz Mole rojo
  • 10 oz Queso quesadilla, shredded
  • 10 oz Queso Oaxaca, shredded

Instructions

  1. Preheat oven to 350°F
  2. Heat a large cast iron pan over high heat. Add chorizo and stir-fry for 4 to 5 minutes until fully cooked.
  3. Add mole rojo and stir to combine. Evenly sprinkle cheese over the top. Bake for 10 to 15 minutes or until cheese has browned on top.
