Mole Poblano Pork Ribs

Ingredients

  • 2 lb Pork loin baby back cross cut ribs
  • 1 tbsp Canola oil
  • 1/2 cup Mole poblano

Instructions

  1. Season pork ribs generously with salt and pepper, then preheat oven to 350ºF.
  2. Heat oil in a large skillet set over medium-high heat. Add ribs and sear on each side for 2 to 3 minutes.
  3. Transfer to a baking dish and pour mole evenly over the top. Cover with foil and bake for 1 1/2 hours or until ribs are tender.
  4. After 45 minutes, remove foil, increase temperature to 400ºF and continue to cook for an additional 15 minutes to allow ribs to brown.
  5. Cut and serve.
