Mole Poblano Pork Ribs

Ingredients
- 2 lb Pork loin baby back cross cut ribs
- 1 tbsp Canola oil
- 1/2 cup Mole poblano
Instructions
- Season pork ribs generously with salt and pepper, then preheat oven to 350ºF.
- Heat oil in a large skillet set over medium-high heat. Add ribs and sear on each side for 2 to 3 minutes.
- Transfer to a baking dish and pour mole evenly over the top. Cover with foil and bake for 1 1/2 hours or until ribs are tender.
- After 45 minutes, remove foil, increase temperature to 400ºF and continue to cook for an additional 15 minutes to allow ribs to brown.
- Cut and serve.
