M&M’s Red and Green Crepe Cake

Ingredients

  • 2 Large eggs, room temperature, divided use
  • 1 cup 2% reduced fat milk
  • 3/4 cup All purpose flour
  • 1/4 tsp Kosher salt
  • 3 tbsp Vegetable oil, divided use
  • 4 drops Red food coloring, as desired
  • 4 drops Green food coloring, as desired
  • 6 oz 1/3 less fat cream cheese, softened
  • 1/4 cup Confectioners powdered sugar, sifted
  • 3.2 oz Prepared vanilla pudding cup
  • 1/2 cup Heavy whipping cream, whipped to stiff peaks
  • 1/2 cup M&M’s Milk Chocolate Candy Holiday Bag

Instructions

  1. In a blender add eggs, milk, flour, salt, and 2 tbsp oil, and blend until smooth. Divide batter between 2 medium bowls. Stir red food coloring into 1 bowl and green food coloring into the other. Set aside for at least 30 minutes or until batter is the consistency of thick cream. If too thick, thin with more water 1 teaspoon at a time.

  3. Brush some remaining oil in a 7-inch non-stick skillet set over medium heat. Pour 3 Tbsp of red batter into skillet, swirling to thinly coat the bottom. Cook for 60 to 90 seconds or until crepe begins to curl around the edges. Flip and cook for 30 seconds or until set. Transfer to a parchment paper–lined baking sheet. Repeat with remaining red batter to make 6 crepes. Repeat with green batter to make 6 crepes. Let cool completely.
  4. In another medium bowl, use a handheld electric mixer to beat together cream cheese and confectioners’ sugar until combined. Beat in vanilla pudding until blended and smooth then fold in heavy whipping cream.
