  • 1/2 tsp Baking powder
  • 1/2 tsp Ground cinnamon
  • 12 oz Frozen raspberries, thawed

Instructions

  1. Heat oven to 425°F.
  2. Line 20 cupcake tins with paper liners and spray with non-stick cooking spray.
  3. Combine chocolate and olive oil in a microwave safe bowl and cover with plastic wrap.
  4. Microwave on high power for 1 1/2 minutes. Stir to blend.
  5. Stir in vanilla, sugar and sweetener until blended.
  6. Whisk in beaten eggs, flour, baking powder and cinnamon.
  7. Spoon 1 tablespoon batter into each prepared mini cupcake liner.
  8. Bake 4 minutes on center oven rack until sides of cupcakes are firm and centers are soft.
  9. Remove from oven and cool 1 minute.
  10. Loosen edges of paper liners with a knife & invert onto serving plates.
  11. Serve each mini chocolate volcano cup with 2 tablespoons raspberries.
