Mile High Nacho Burgers

Ingredients
- 1 1/2 lb 80/20 Ground Chuck, formed into 4 patties
- 4 Hamburger buns
- 1/4 cup Pickled jalapeños
- 1/2 cup Pico de gallo
- 1 lb Queso blanco
- 2 cups Tortilla chips, crushed
Instructions
- Preheat cast iron flat top griddle to medium-high.
- Season hamburger patties to taste with salt and pepper. Cook on hot griddle, flipping and rotating, until internal temperature reaches 165ºF, about 8 minutes. Set aside.
- Place cheese and pico de gallo into a small pot and heat on low. Watch cheese as it melts, stirring frequently (so it doesn't burn) until completely melted, about 7 minutes.
- To assemble burgers, place bottom bun on a plate and top with some melted cheese.
- Add beef patty, more cheese, crushed chips, pickled jalapeños and top bun. Repeat until all burgers are assembled.
