Unsaved Mile High Nacho Burgers

Ingredients

  • 1 1/2 lb 80/20 Ground Chuck, formed into 4 patties
  • 4 Hamburger buns
  • 1/4 cup Pickled jalapeños
  • 1/2 cup Pico de gallo
  • 1 lb Queso blanco
  • 2 cups Tortilla chips, crushed

Instructions

  1. Preheat cast iron flat top griddle to medium-high.
  2. Season hamburger patties to taste with salt and pepper. Cook on hot griddle, flipping and rotating, until internal temperature reaches 165ºF, about 8 minutes. Set aside.
  3. Place cheese and pico de gallo into a small pot and heat on low. Watch cheese as it melts, stirring frequently (so it doesn't burn) until completely melted, about 7 minutes.
  4. To assemble burgers, place bottom bun on a plate and top with some melted cheese.
  5. Add beef patty, more cheese, crushed chips, pickled jalapeños and top bun. Repeat until all burgers are assembled.
