Ingredients

  • 4 Large eggs
  • 2 tbsp Milk
  • 1/2 tsp Kosher salt
  • 1/2 cup Hot pico de gallo
  • 10 pieces Tortilla chips
  • 1/2 cup Shredded cheddar cheese

Instructions

  1. Heat a skillet over medium-high heat. Spray with non-stick spray.
  2. Whisk eggs, milk, and salt in a bowl until well combined. When pan is hot, add eggs and cook for 30 seconds, stirring constantly.
  3. Add pico de gallo and chips, and stir to combine. Turn heat down to low and continue to stir until eggs reach desired doneness. Sprinkle with cheese and serve with extra pico de gallo on the side.
