Mexican Style Lasagna

Ingredients
- 1 tbsp Canola oil
- 1 1/2 lb Diced seasoned beef-bistec norteno, cooked
- 1 cup White onion(s), sliced
- 30 oz Diced fire roasted tomatoes
- 16 oz Easy melt queso blanco, cubed
- 12 oz Oven ready lasagna noodles
- 1 cup Regular sour cream
- 1/2 cup Green onion, chopped
Instructions
- Preheat oven to 375ºF.
- Heat oil in a large skillet on medium-high. Add beef and cook several minutes breaking meat apart as it cooks. Continue to cook until beef is well browned.
- Add in onions and cook until translucent. Add in tomatoes and cheese, stir until cheese melts then remove from heat.
- To assemble the lasagna, spoon a small amount of meat sauce in the bottom of a 9 x 13-inch pan. Top with one layer of oven ready noodles, then follow with 1/4 of meat sauce and scatter a few dollops of sour cream. Repeat twice and top with remaining meat mixture and sour cream.
- Cover with foil and bake 30 minutes. Remove foil and bake an additional 15 minutes. Remove from oven, garnish with green onions and serve.
