Mexican Style Cauliflower Rice

Serves 6
Ingredients
- 1 tbsp Garlic cloves, minced or zested
- 1/4 cup Extra virgin olive oil
- 1 tsp Ground cumin
- 2 tbsp Tomato paste
- 1/3 cup Fresh cilantro, chopped fine
- 16 oz Riced cauliflower
- 1/2 cup Veggie stock or broth
- 1/2 cup White onions, sliced
Instructions
- Place a non-stick sauté pan over medium-heat. Add oil and allow to get hot before adding onions and garlic.
- Sweat onions and garlic for 3 to 4 minutes, then add cauliflower rice, tomato paste and cumin. Stir fry everything to combine before adding stock.
- Add stock and cook until stock is completely evaporated. Season to taste as needed and garnish with fresh chopped cilantro.
