Mexican Style Cauliflower Rice

Unsaved Mexican Style Cauliflower Rice

Ingredients

  • 1 tbsp Garlic cloves, minced or zested
  • 1/4 cup Extra virgin olive oil
  • 1 tsp Ground cumin
  • 2 tbsp Tomato paste
  • 1/3 cup Fresh cilantro, chopped fine
  • 16 oz Riced cauliflower
  • 1/2 cup Veggie stock or broth
  • 1/2 cup White onions, sliced

Instructions

  1. Place a non-stick sauté pan over medium-heat. Add oil and allow to get hot before adding onions and garlic.
  2. Sweat onions and garlic for 3 to 4 minutes, then add cauliflower rice, tomato paste and cumin. Stir fry everything to combine before adding stock.
  3. Add stock and cook until stock is completely evaporated. Season to taste as needed and garnish with fresh chopped cilantro.
