Unsaved Medley Of Zucchini, Mirlitons, And Yellow Squash

Ingredients

  • 1/4 cup Unsalted butter
  • 1 Medium white onion, chopped
  • 1 1/2 tbsp Garlic Cloves, minced
  • 4 Medium chayote squash (mirlitons), peeled, cut in half, sliced 1/4-inch thick and seed discarded
  • 2 Medium zucchini squash, trimmed and cut crosswise sliced 1/4-inch thick
  • 2 Medium yellow squash, trimmed and cut crosswise sliced 1/4-inch thick
  • 1/8 tsp Kosher salt
  • 1/8 tsp Ground Black Pepper

Instructions

  1. Melt butter in a 5-quart stockpot over medium heat.
  2. Sauté onion and garlic 5 minutes then stir in mirlitons, zucchini and yellow squash.
  3. Season with salt and pepper.
  4. Reduce heat to medium-low and cook covered 15 to 20 minutes. Stir occasionally.
