Mediterranean Spinach Artichoke Dip

Ingredients
- 1 Vegetable oil no-stick cooking spray
- 16 oz Artichoke quarters, frozen
- 1/4 cup Extra virgin olive oil
- 3 Peeled garlic cloves, chopped
- 1/2 cup Fresh basil, chopped
- 1/2 cup Tomato, chopped
- 1/2 cup Sliced olives, chopped
- 16 oz Frozen chopped spinach
- 6 oz Shredded Asiago cheese
Instructions
- Heat oven to 425°F.
- Spray a deep-dish pie pan with non-stick cooking spray and set aside.
- Cook the artichokes according to package directions and drain.
- Thinly slice the artichokes and set aside.
- Heat a large skillet over medium heat for 3 minutes.
- Add olive oil and chopped garlic; stir-fry for 30 seconds.
- Add the basil, tomato and olives; stir-fry for 3 minutes.
- Remove mixture from heat and add frozen spinach, sliced artichokes and shredded cheese.
- Evenly spread the mixture into the prepared baking dish and bake for 30 minutes until cheese is bubbly and golden.
- Serve the dip with bread slices or over steaming hot pasta.
