Quick & easy:Mediterranean Salmon and Tuscan Vegetables

Ingredients
- 4 tbsp Mediterranean hummus
- 2 tbsp Feta cheese crumbles
- 10 oz Salmon filets
- 12 oz Sauced Tuscan blend vegetables
Instructions
- Preheat oven to 425ºF. Season salmon with salt and pepper, then spread half of the hummus on each filet. Sprinkle with feta and gently press to adhere.
- Bake for 12 to 14 minutes or until salmon is cooked to your liking. While salmon cooks, heat Tuscan vegetables in the microwave according to package directions.
- Serve salmon over vegetables and garnish with a lemon wedge if desired.
