Quick & easy:Mediterranean Roasted Salmon

Ingredients

  • 1 Small lemon, cut into thin slices
  • 5 oz Baby spinach, roughly chopped
  • 2 Large cloves fresh garlic, very thinly sliced
  • 1 1/2 lb Atlantic salmon, skin removed
  • 1/4 Small red onion, very thinly sliced
  • 1/2 cup Baby tomatoes, cut in half
  • 4 Garlic Parmesan butter dollops

Instructions

  1. Heat oven to 375ºF. Tear off a piece of foil about three times the size of the fish and spread it out on a rimmed backing sheet.
  2. In the middle, layer lemons, spinach, and garlic on foil. Place fish on top and season with salt and pepper, as desired. Top with onions, tomatoes, and butter dollops.
  3. Seal foil packet and place in oven. Bake for 15 to 17 minutes. Remove from oven and rest for 3 to 5 minutes before serving.
