Unsaved Mediterranean Linguine with Turkey & Spinach

Ingredients

  • 8 oz Gluten free linguine pasta, uncooked
  • 1 cup Light sour cream, regular, low fat or fat free
  • 1/2 cup Tomato and basil crumbled feta
  • 3 Peeled garlic cloves, Chopped
  • 2 cups Low sodium deli turkey breast, chopped
  • 10 oz Chopped spinach
  • 1/4 tsp Kosher salt
  • 1/4 tsp Ground black pepper

Instructions

  1. In a large bowl, combine sour cream, feta cheese, garlic and turkey. Season to taste with salt and black pepper. Set mixture aside.
  2. Cook pasta according to package directions. Cook spinach according to package directions and drain. Drain pasta thoroughly and combine with spinach.
  3. Add hot pasta mixture to sour cream turkey mixture and toss gently. Serve immediately.
