Mediterranean Chopped Salad

Ingredients

  • 1 tbsp Dijon Mustard
  • 1/4 cup Red Wine Vinegar
  • 3 Peeled Garlic Cloves, smashed
  • 1 1/2 tsp Dried Mediterranean Oregano
  • 1 tsp Honey
  • 1 Large head of iceberg lettuce, chopped fine
  • 1 cup Grapeseed Oil
  • 1 head Organic radicchio, chopped small
  • 1 pt Grape tomatoes, cut in half
  • 1/2 cup Red onions, thin sliced
  • 1 cup Sliced pepperoncini, drained and rinsed
  • 1 cup Genoa salami, thinly sliced
  • 1 cup Provolone cheese slices, diced into small squares

Instructions

  1. In a blender, add mustard, red wine vinegar, garlic, oregano and honey. Blend together and slowly drizzle oil until an emulsion forms.
  2. Season to taste with salt and pepper as needed, set aside or refrigerate for later use. Dressing can be made up to a day in advance.
  3. Toss all salad ingredients together and toss well.
  4. Drizzle with dressing as needed for each serving.
  5. Garnish with more cheese or croutons if desired.
