Mediterranean Chicken Ciabatta Sandwiches

Ingredients
- 1 cup Baby spring mix
- 1 tbsp Extra Virgin Olive Oil
- 1 tbsp Fresh basil, chopped
- 2 Roma tomatoes, sliced
- 4 Ciabatta rolls
- 1 Lemons, juiced
- 1/8 tsp Black pepper grinder
- 1/2 cup Kalamata sliced olives, sliced
- 1 lb Fresh chicken tenders
- 6 oz Feta with basil and tomato, crumbled
- 1 tbsp Garlic cloves, chopped
Instructions
- Prepare ciabatta rolls according to package directions and slice lengthwise for sandwiches. Set aside.
- Season the chicken tenders with black pepper and set aside.
- Heat charcoal or gas grill to 375°F.
- Grill chicken tenders for 2-3 minutes per side until juices run clear. Remove from heat and keep warm in foil.
- Place grilled chicken on bottom half of ciabatta roll. Top chicken with sliced olives, tomato slices, spring mix, feta basil and tomato crumbles and top portion of ciabatta roll.
- Combine the Mediterranean mix, basil, garlic and extra virgin olive oil in a small serving dish to make Mediterranean Olive Oil Salad.
- Serve sandwich with side salad drizzled with lemon juice.
