Ingredients
- 1/4 cup Balsamic vinaigrette salad dressing, divided use
- 10 oz Cherry tomatoes, cut in half lengthwise
- 1/2 cup Low sodium garbanzo beans, drained and rinsed
- 5 oz Romaine, baby red butter & arugula lettuce blend
- 1 cup Quick heat white & red quinoa
Instructions
- Add lettuce to a large bowl. Toss with half of dressing.
- Place quinoa, beans and tomato halves in a smaller bowl. Toss with remaining dressing.
- Divide lettuce evenly between 4 bowls. Top with quinoa mixture.
