Ingredients
- 1 Medium Spaghetti squash, (about 4 pounds)
- 8 oz Fava bean taco style protein crumbles, crumbled up
- 1 cup Dairy free Mexican style shredded cheese
- 1 cup Fresh mild guacamole with pico, stir well to combine before using
Instructions
- Preheat oven to 375ºF. Meanwhile, use a sharp knife to poke a small hole in the squash. Microwave for 10 minutes.
- Cut squash in half and scoop out seeds. Lay cut-side-up and fill with crumbled fava bean meat. Top with cheese and bake for an additional 10 minutes.
- Remove from oven and top with guacamole/pico de gallo mixture.
