Mason Jar Classic Caesar Dressing

Ingredients

  • 3 Garlic cloves, crushed
  • 4 Individual anchovies, oil drained
  • 1 tbsp Dijon mustard
  • 1/4 cup Fresh lemon juice, plus more to taste if desired
  • 1 Large pasteurized egg yolk, yolk only
  • 1/4 cup Shredded parmesan cheese, grated plus more shaved for salad if desired
  • 1 1/4 cups Extra virgin olive oil

Instructions

  1. Combine all ingredients in a wide-mouthed mason jar.
  2. Using an immersion blender, blend until dressing is smooth and creamy.
  3. Season to taste with lots of cracked pepper and salt as needed.
  4. Chef's Note: I like to serve this over a bed of baby romaine spears and shaved Parmesan.
