Mason Jar Chimichurri Vinaigrette

Ingredients

  • 1/4 cup Fresh cilantro, chopped fine
  • 1/4 cup Curly leaf parsley, chopped fine
  • 1 tsp Mexican Oregano
  • 2 Garlic Cloves, crushed
  • 1 1/2 tbsp Shallots, minced fine
  • 1/4 cup Poblano peppers, roughly chopped
  • 1/4 cup Red Wine Vinegar
  • 1 1/4 cups Expeller Pressed Sunflower Oil

Instructions

  1. Combine all ingredients into a wide-mouthed mason jar.
  2. Using an immersion blender combine everything until well emulsified.
  3. Season to taste with salt and pepper as needed. Great for use as a salad dressing as well as a marinade for chicken or beef.
