Mason Jar Chimichurri Vinaigrette

Ingredients
- 1/4 cup Fresh cilantro, chopped fine
- 1/4 cup Curly leaf parsley, chopped fine
- 1 tsp Mexican Oregano
- 2 Garlic Cloves, crushed
- 1 1/2 tbsp Shallots, minced fine
- 1/4 cup Poblano peppers, roughly chopped
- 1/4 cup Red Wine Vinegar
- 1 1/4 cups Expeller Pressed Sunflower Oil
Instructions
- Combine all ingredients into a wide-mouthed mason jar.
- Using an immersion blender combine everything until well emulsified.
- Season to taste with salt and pepper as needed. Great for use as a salad dressing as well as a marinade for chicken or beef.
