Ingredients
- 3 tbsp Olive oil
- 1/2 tsp Cumin seed
- 2 tsp Smoky turmeric rub
- 1 tsp Salt
- 1 tsp Fresh ginger root, peeled and grated
- 1 Medium serrano chili, stem removed, sliced into rounds
- 8 Taro roots (eddoes), peeled and halved, sliced into 1/4 inch julienne
- 2 tbsp Water
- 2 tbsp Cilantro, rinsed, patted dry, rough chopped
Instructions
- Heat a large skillet over medium-high heat. When hot, add olive oil. Add cumin seed, smoky turmeric seasoning, salt, ginger, and green chili. Stir for 30 seconds continuously.
- Add taro pieces and toss until coated in oil mixture. Turn down heat to medium and cook for 4 minutes, stirring occasionally.
- Add water to deglaze pan and stir until water is evaporated. Cook 4 more minutes or until taro is fork tender. Sprinkle cilantro into pan and toss. Serve immediately.
