Masala Arbi

Ingredients

  • 3 tbsp Olive oil
  • 1/2 tsp Cumin seed
  • 2 tsp Smoky turmeric rub
  • 1 tsp Salt
  • 1 tsp Fresh ginger root, peeled and grated
  • 1 Medium serrano chili, stem removed, sliced into rounds
  • 8 Taro roots (eddoes), peeled and halved, sliced into 1/4 inch julienne
  • 2 tbsp Water
  • 2 tbsp Cilantro, rinsed, patted dry, rough chopped

Instructions

  1. Heat a large skillet over medium-high heat. When hot, add olive oil. Add cumin seed, smoky turmeric seasoning, salt, ginger, and green chili. Stir for 30 seconds continuously.
  2. Add taro pieces and toss until coated in oil mixture. Turn down heat to medium and cook for 4 minutes, stirring occasionally.
  3. Add water to deglaze pan and stir until water is evaporated. Cook 4 more minutes or until taro is fork tender. Sprinkle cilantro into pan and toss. Serve immediately.
