Ingredients

  • 1 Skin on tilapia, pan fried
  • 1 cup All Purpose Flour
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 1 Greenhouse Tomato, sliced
  • 1/4 cup White Onion, sliced thin
  • 3 Green Leaf Lettuce
  • 3 cups Canola Oil
  • 1/2 Lime, juiced

Instructions

  1. Heat a large cast iron skillet to medium high.
  2. Add oil to the skillet and begin heating.
  3. While skillet is heating, score tilapia 4 times on each side of the fish and season with salt and pepper.
  4. Dust tilapia with all purpose flour on both sides.
  5. Place whole tilapia into the skillet and begin pan frying.
  6. Cook fish for 6 minutes on each side or until an internal temperature reaches 145 degrees.
  7. While fish is pan frying build your plate with lettuce leaves, sliced onion, and sliced tomatoes.
  8. Once fish is finished cooking remove from the skillet and place it on a baking perforated pan to allow the oil to come off.
  9. Place fish on the plate with all the garnishes and squeeze half a lime over the top and serve hot.
