Unsaved Marinated Sicilian Olives

Ingredients

  • 9 oz Rustico Castelvetrano Pitted Olives,, 2 jars, drained and rinsed well
  • 1 Large lemon(s), peel only or zested if preferred
  • 1 Large navel orange, peel only or zested if preferred
  • 1/4 cup Red Wine Vinegar
  • 1/3 cup Extra Virgin Olive Oil
  • 2 Fresh rosemary, 2 to 3 sprigs.
  • 3 Garlic Cloves, zested or minced finely.

Instructions

  1. Add all ingredients in a bowl, toss to combine, cover and refrigerate at least 45 minutes to 1 hour to allow flavors to meld.
  2. Serve as an appetizer or mix into salads. Olives can be made at least 2 days in advance of use.
