Marinated Garden Medley

Ingredients

  • 1 1/2 cups Extra fine whole green beans
  • 1 1/2 cups Parasienne Carrots
  • 4 Red radishes, thin sliced
  • 1 cup Sweet tomatoes, halved
  • 1 cup Mushrooms, sliced
  • 1/2 cup Green onion, chopped
  • 1/4 cup Fresh basil, chopped
  • 2 Fresh lemons, juiced
  • 2 tbsp Extra virgin olive oil
  • 1/4 tsp Ground black pepper
  • 1/4 tsp Kosher salt

Instructions

  1. Combine green beans, carrots and 2 tablespoons water in a microwave-safe dish, cover with plastic and heat on high power 4 minutes. Immerse in cold water and drain.
  2. Combine cooked vegetables, radish slices, tomatoes, mushrooms, onion, basil, lemon juice and olive oil in a large bowl.
  3. Season with salt and pepper.
  4. Toss ingredients, cover with plastic and chill 2 hours.
