Instructions

  1. Place mangoes, avocado, Cotija cheese, pepitas, green onions and roasted corn kernels in a large bowl. Set aside.
  2. In a blender combine Habanero & Aji Amarillo Sauce, lime juice, olive oil and cilantro. Blend until emulsified.
  3. Pour dressing over mango mixture and mix well. Serve over mixed greens or Bibb lettuce.
