Mango Salad with Habanero Vinaigrette

Ingredients
- 2 Fresh mango, peeled and sliced
- 1 cup Large Haas avocado, diced
- 1/4 cup Cotija cheese, crumbled
- 1/4 cup Pepitas, roasted
- 1/4 cup Green onion(s), chopped
- 2 Large super sweet corn, roasted and kernels removed from cob
- 1/3 cup Humble House Habanero & Aji Amarillo Sauce
- 1 tbsp Lime(s), juice
- 1/3 cup Olive oil
- 1/2 cup Fresh cilantro, chopped
- 1 Medium Bibb lettuce, torn or roughly chopped
Instructions
- Place mangoes, avocado, Cotija cheese, pepitas, green onions and roasted corn kernels in a large bowl. Set aside.
- In a blender combine Habanero & Aji Amarillo Sauce, lime juice, olive oil and cilantro. Blend until emulsified.
- Pour dressing over mango mixture and mix well. Serve over mixed greens or Bibb lettuce.
