Unsaved Mama Maria's Tamale-Rice Casserole

Ingredients

  • 2 cups Mexican style blend shredded cheese
  • 2.2 oz Sliced black olives, drained
  • 32 oz Tortilla soup
  • 1/2 cup Green onions, chopped
  • 12 Molino style chicken tamales
  • 16 oz Steamable Spanish rice

Instructions

  1. Heat oven to 375°F.
  2. Coat a 9 x 13-inch baking dish with non-stick spray.
  3. Cook rice in microwave oven according to package directions (cook right in bag; don't cut or open bag).
  4. Remove rice carefully; spread over bottom of baking dish.
  5. Discard husks from tamales; cut or break up into bite-size pieces. Layer evenly over rice.
  6. Shake tortilla soup jar to blend; then pour evenly over casserole. Top with shredded cheese and olives.
  7. Bake 30-40 minutes or until casserole bubbles and cheese melts.
  8. Let stand 5 or 10 minutes; garnish with green onions and serve.
