Machacado con Huevo

Ingredients

  • 2 Garlic cloves, chopped
  • 2 tsp Olive oil
  • 1/2 cup Water
  • 1/2 cup Dried beef
  • 2 tbsp Hatch chiles
  • 4 Large brown eggs
  • 6 Flour tortillas
  • 1/2 cup White onion, diced

Instructions

  1. In a large sauté pan over medium high heat add oil and brown onions and garlic for 3 minutes stirring occasionally.
  2. Add chopped chilies and dried beef, then sauté until well incorporated.
  3. Add 1/2 cup water and stir until mostly absorbed, about 2 to 3 minutes.
  4. Using a spoon or flat spatula, form a well in the middle of pan.
  5. Crack eggs directly into well and slightly scramble, then fold meat mixture into eggs.
  6. Cook about 2 minutes or until eggs are fully cooked.
  7. Serve in flour tortillas and garnish with hot sauce, cheese, or your favorite breakfast taco toppings.
