Ingredients
- 2 Garlic cloves, chopped
- 2 tsp Olive oil
- 1/2 cup Water
- 1/2 cup Dried beef
- 2 tbsp Hatch chiles
- 4 Large brown eggs
- 6 Flour tortillas
- 1/2 cup White onion, diced
Instructions
- In a large sauté pan over medium high heat add oil and brown onions and garlic for 3 minutes stirring occasionally.
- Add chopped chilies and dried beef, then sauté until well incorporated.
- Add 1/2 cup water and stir until mostly absorbed, about 2 to 3 minutes.
- Using a spoon or flat spatula, form a well in the middle of pan.
- Crack eggs directly into well and slightly scramble, then fold meat mixture into eggs.
- Cook about 2 minutes or until eggs are fully cooked.
- Serve in flour tortillas and garnish with hot sauce, cheese, or your favorite breakfast taco toppings.
