Instructions

  1. In a blender or food processor, combine cottage cheese, sweetener, and vanilla extract. Blend until smooth (if mixture doesn't blend together, add cold water 1 Tbsp. at a time).
  2. To assemble parfaits, divide 1/2 the cottage cheese mixture evenly between 4 bowls or glasses. Divide fresh strawberries between the bowls and top each with 1 tbsp. of granola. Finish with a layer of remaining cottage cheese followed by all the jam, and remaining granola.
