Low Carb Lifestyle Chipotle Bean Burritos

Ingredients

  • 1 tbsp Canola oil
  • 2 tsp Chipotle chili powder
  • 1 tbsp Peeled garlic cloves, chopped
  • 15 oz Dark red kidney beans, rinse and drained
  • 15 oz Low sodium black beans, rinsed and drained
  • 1/2 cup Medium pico de gallo
  • 8 Low carb tortillas
  • 2 cups Roma tomatoes, chopped
  • 1 cup Mexican style blend shredded cheese
  • 2 cups Green leaf lettuce, shredded
  • 1 cup Sour Cream

Instructions

  1. Heat oil in a large sauté pan set over medium-high heat.
  2. Add chili powder and garlic, cook for 1 minute then add beans. Cook for an additional 4 to 5 minutes or until beans are heated through.
  3. Remove from heat and stir in salsa.
  4. Warm tortillas until pliable, about 1 minute per tortilla.
  5. Spoon bean mixture in the center of warm tortillas and top with tomatoes, cheese, lettuce, and sour cream.
  6. Roll tight, cut in half, and serve.
