Low Carb Lifestyle Chipotle Bean Burritos

Ingredients
- 1 tbsp Canola oil
- 2 tsp Chipotle chili powder
- 1 tbsp Peeled garlic cloves, chopped
- 15 oz Dark red kidney beans, rinse and drained
- 15 oz Low sodium black beans, rinsed and drained
- 1/2 cup Medium pico de gallo
- 8 Low carb tortillas
- 2 cups Roma tomatoes, chopped
- 1 cup Mexican style blend shredded cheese
- 2 cups Green leaf lettuce, shredded
- 1 cup Sour Cream
Instructions
- Heat oil in a large sauté pan set over medium-high heat.
- Add chili powder and garlic, cook for 1 minute then add beans. Cook for an additional 4 to 5 minutes or until beans are heated through.
- Remove from heat and stir in salsa.
- Warm tortillas until pliable, about 1 minute per tortilla.
- Spoon bean mixture in the center of warm tortillas and top with tomatoes, cheese, lettuce, and sour cream.
- Roll tight, cut in half, and serve.
