Lovely Lamb Skewers

Ingredients

  • 2 tsp Olive oil
  • 6 tbsp Gluten free soy sauce
  • 2 tsp Ground nutmeg
  • 1 tbsp Garlic powder
  • 2 tbsp Ground cinnamon
  • 2 tbsp Ground cumin
  • 1 lb Lamb, cubed for stew
  • 1 Large mango, peeled and cut in 2-inch pieces
  • 1 lb Red onion, cut in 2-inch pieces
  • 1 Large orange bell pepper
  • 1 Large green bell pepper, cut in 2-inch pieces
  • 8 oz Button mushrooms, washed

Instructions

  1. Prepare grill to medium heat.
  2. Submerge wooden skewers in water and soak until ready to use.
  3. In a medium bowl, add olive oil, soy sauce, nutmeg, garlic powder, cinnamon, cumin and lamb. Toss well to coat and set aside to marinate.
  4. Thread skewers as desired, adding a few cubes of lamb, mango, onion, bell peppers and whole button mushrooms.
  5. Grill 15 minutes, turning skewers every 5 minutes to cook evenly, or until lamb is fully cooked.
