Lovely Lamb Skewers

Ingredients
- 2 tsp Olive oil
- 6 tbsp Gluten free soy sauce
- 2 tsp Ground nutmeg
- 1 tbsp Garlic powder
- 2 tbsp Ground cinnamon
- 2 tbsp Ground cumin
- 1 lb Lamb, cubed for stew
- 1 Large mango, peeled and cut in 2-inch pieces
- 1 lb Red onion, cut in 2-inch pieces
- 1 Large orange bell pepper
- 1 Large green bell pepper, cut in 2-inch pieces
- 8 oz Button mushrooms, washed
Instructions
- Prepare grill to medium heat.
- Submerge wooden skewers in water and soak until ready to use.
- In a medium bowl, add olive oil, soy sauce, nutmeg, garlic powder, cinnamon, cumin and lamb. Toss well to coat and set aside to marinate.
- Thread skewers as desired, adding a few cubes of lamb, mango, onion, bell peppers and whole button mushrooms.
- Grill 15 minutes, turning skewers every 5 minutes to cook evenly, or until lamb is fully cooked.
