Unsaved Loaded Sausage Mac and Cheese

Ingredients

  • 1 tbsp Vegetable oil
  • 7 oz Diced bell peppers
  • 12 oz Smoked Beef Brisket Sausage, sliced, or flavor of your choice
  • 15 oz Cajun Pasta Sauce
  • 8 oz Rigatoni Pasta
  • 5 oz Super Greens Mix

Instructions

  1. Heat a large pot over medium heat. Add oil, bell peppers and sausage to pan. Stir and cook until peppers start to soften and sausage begins to brown.
  2. Add sauce to pan. Fill sauce bottle up with water one and a half times and add to pan. Stir in uncooked pasta and reduce heat to medium low. Cover and simmer for 12 minutes, stirring frequently.
  3. Stir power greens through pasta. Cook covered another 4 to 6 minutes, or to desired pasta doneness. Add more water if needed throughout cooking to get desired consistency of sauce.
  4. Chef's Note: For a slightly spicier version of this dish, try the H-E-B Creamy Poblano Pasta Sauce and a shake of Tabasco hot sauce.
