Loaded Sausage Mac and Cheese

Ingredients
- 1 tbsp Vegetable oil
- 7 oz Diced bell peppers
- 12 oz Smoked Beef Brisket Sausage, sliced, or flavor of your choice
- 15 oz Cajun Pasta Sauce
- 8 oz Rigatoni Pasta
- 5 oz Super Greens Mix
Instructions
- Heat a large pot over medium heat. Add oil, bell peppers and sausage to pan. Stir and cook until peppers start to soften and sausage begins to brown.
- Add sauce to pan. Fill sauce bottle up with water one and a half times and add to pan. Stir in uncooked pasta and reduce heat to medium low. Cover and simmer for 12 minutes, stirring frequently.
- Stir power greens through pasta. Cook covered another 4 to 6 minutes, or to desired pasta doneness. Add more water if needed throughout cooking to get desired consistency of sauce.
- Chef's Note: For a slightly spicier version of this dish, try the H-E-B Creamy Poblano Pasta Sauce and a shake of Tabasco hot sauce.
