Lime-Butter Cod

Ingredients

  • 2 tbsp Fresh Italian parsley, chopped for garnish
  • 2 tbsp White onions, minced
  • 1/4 tsp Kosher salt
  • 1 1/2 lb Cod fillets, thawed
  • 1/4 tsp Ground black pepper
  • 1 1/2 tbsp Limes, juiced and zested
  • 4 tbsp Unsalted butter

Instructions

  1. Rinse fillets under cold water and pat dry with paper towels.
  2. Cut fillets in half. Season both sides with salt and pepper.
  3. Chop onion very finely to mince.
  4. Zest lime; zest only the outer portion of the peel. Squeeze lime for juice.
  5. Heat a large, nonstick skillet over medium-high heat for 2 minutes.
  6. Melt 1 teaspoon butter in skillet; tilt skillet to coat bottom.
  7. Add cod and cook 2 1/2 - 4 minutes per side (thicker pieces may take longer). Remove to a plate and keep warm.
  8. Melt 2 teaspoons butter in skillet over medium heat. Add onion and sauté for 1 minute. Add lime juice; stir and heat very briefly.
  9. Add remaining 3 tablespoons butter and stir to melt. Heat 1 minute or until butter is frothy and golden.
  10. Stir in zest; pour sauce over cod. Garnish with parsley, if desired, and serve immediately.
