Let's Party Spinach Dip

Ingredients

  • 4 Thick sliced bacon
  • 1 cup Yellow onions, diced
  • 2 tsp Unbleached all purpose flour
  • 16 oz Chopped Spinach, thawed and dried
  • 1 cup Whole Milk
  • 1/2 cup Regular Sour Cream
  • 8 oz Cream cheese
  • 1/2 cup Grated parmesan cheese, grated

Instructions

  1. Preheat oven to 350°F.
  2. Chop bacon and cook in a large skillet over medium heat about 10 minutes or until browned and crispy. Drain on paper towels.
  3. Discard all but 1 tablespoon of drippings from the pan, then add onion and cook 8 to 10 minutes or until tender, stirring occasionally.
  4. Add flour and cook 30 seconds. Then add spinach,milk, sour cream, and cream cheese. Stir and cook until cream cheese melts.
  5. Stir in bacon and 1/4 cup Parmesan.
  6. Transfer to a 1 1/2 quart casserole or baking dish; top with remaining 1/4 cup Parmesan and bake 20 minutes or until hot and bubbly.
