Unsaved Lentil Stew with Kale & Sweet Potatoes

Ingredients

  • 2 tsp Extra virgin olive oil
  • 1 Small white onion(s), chopped
  • 3 Garlic cloves, minced
  • 4 cups Kale, roughly chopped
  • 1 Sweet potato(es), peeled and diced
  • 1 cup Carrots, chopped
  • 1 cup Lentils
  • 1/2 tsp Kosher salt
  • 1/2 tsp Ground black pepper
  • 32 oz Low sodium vegetable broth

Instructions

  1. Place oil in a large pot or Dutch oven over medium-high heat.
  2. Add onions and cook, tossing occasionally, 3 to 5 minutes.
  3. Stir in garlic and cook until fragrant, about 1 minute longer.
  4. Add kale, sweet potatoes, carrots, lentils, salt, pepper and broth.
  5. Bring to a boil, then reduce heat and simmer partially covered.
  6. Stir occasionally and cook until lentils and sweet potatoes are tender, 30 to 35 minutes.
