Lentil Stew with Kale & Sweet Potatoes

Ingredients
- 2 tsp Extra virgin olive oil
- 1 Small white onion(s), chopped
- 3 Garlic cloves, minced
- 4 cups Kale, roughly chopped
- 1 Sweet potato(es), peeled and diced
- 1 cup Carrots, chopped
- 1 cup Lentils
- 1/2 tsp Kosher salt
- 1/2 tsp Ground black pepper
- 32 oz Low sodium vegetable broth
Instructions
- Place oil in a large pot or Dutch oven over medium-high heat.
- Add onions and cook, tossing occasionally, 3 to 5 minutes.
- Stir in garlic and cook until fragrant, about 1 minute longer.
- Add kale, sweet potatoes, carrots, lentils, salt, pepper and broth.
- Bring to a boil, then reduce heat and simmer partially covered.
- Stir occasionally and cook until lentils and sweet potatoes are tender, 30 to 35 minutes.
