Lemon-Rosemary Grilled Pork Chops

Ingredients

  • 1/3 cup Extra Virgin Olive Oil
  • 4 Ribeye chop bone-in pork, 1 inch thick
  • 2 tbsp Kosher salt
  • 6 Garlic cloves, crushed
  • 1/2 cup Lemons, juiced
  • 2 tbsp Fresh rosemary, chopped

Instructions

  1. Combine lemon juice, olive oil, garlic, rosemary leaves and salt in a glass dish large enough to hold chops in a single layer.
  2. Lay chops in dish; turn to coat both sides.
  3. Let stand 30 minutes or cover and refrigerate up to 2 hours before cooking.
  4. Heat charcoal 30 minutes until covered with a light layer of gray ash or heat gas grill on high 10 minutes with lid closed.
  5. Remove pork from marinade; discard marinade.
  6. Grill chops 4 inches above Medium heat (375° grill surface temperature). Cook chops 8-10 minutes per side, or until the internal temperature of pork reaches 155°.
  7. Insert an instant read thermometer in the thickest part of the chop, not touching bone, to determine internal temperature.
