Lemon Ricotta Cheese Toasts

Ingredients
- 4 slices Ezekiel 4:9 Sprouted Grain Bread, toasted
- 1 tsp Lemon zest
- 1 Fresh garlic clove, minced
- 8 oz Fat free ricotta cheese
- 1 cup Arugula
- 4 oz Cold smoked sockeye salmon, sliced
- 1 Shallot, thinly sliced
- 1/4 tsp Ground black pepper
Instructions
- Toast bread in toaster or in oven.
- Combine lemon zest, garlic, and ricotta cheese in food processor or blender. Combine until smooth.
- Spread cheese evenly over four pieces of toast.
- Top with arugula, salmon, shallots and pepper. Serve immediately.
