Unsaved Lemon Ricotta Cheese Toasts

Ingredients

  • 4 slices Ezekiel 4:9 Sprouted Grain Bread, toasted
  • 1 tsp Lemon zest
  • 1 Fresh garlic clove, minced
  • 8 oz Fat free ricotta cheese
  • 1 cup Arugula
  • 4 oz Cold smoked sockeye salmon, sliced
  • 1 Shallot, thinly sliced
  • 1/4 tsp Ground black pepper

Instructions

  1. Toast bread in toaster or in oven.
  2. Combine lemon zest, garlic, and ricotta cheese in food processor or blender. Combine until smooth.
  3. Spread cheese evenly over four pieces of toast.
  4. Top with arugula, salmon, shallots and pepper. Serve immediately.
