Lemon Herb Cod with Brussels

Ingredients
- 12 oz Lemon Herb Cod Portions
- 12 oz Brussels sprouts, stem removed and cut in half
- 1 tbsp Olive oil
- 1 tsp Kosher salt
- 1 tsp Ground black pepper
Instructions
- Remove fish from package and place under running cold water for 10 minutes.
- While fish is thawing, preheat oven to 400ºF.
- Once fish is almost thawed, preheat an oven-safe non-stick skillet to medium-high.
- Remove fish from vacuum bags and pat dry with paper towels.
- Pour a splash of olive oil to preheated pan, add fish, and cook for 3 minutes.
- While fish is searing, remove stem from Brussels and cut in half.
- Add Brussels and remaining olive oil, salt, and black pepper to a mixing bowl and toss.
- Flip fish and continue cooking for 3 minutes.
- Line a sheet pan with foil. Arrange Brussels on pan and place in oven. Cook for 15 minutes.
- Remove fish from the stove, top with lemon herb butter, and place in the oven for the last five minutes the Brussels are cooking.
- Once time is done and Brussels are tender, remove both the fish and Brussels and serve hot.
