Unsaved Lemon & Chili Pickled Onions

Ingredients

  • 1 Large white onion, cut in half, and thinly slice with a mandolin or sharp knife
  • 2 tsp Chili powder
  • 1 tsp Kosher salt, plus more as needed to taste once pickled
  • 1/3 cup Fresh lemon juice

Instructions

  1. Place onions, chili powder, salt, and lemon juice in a bowl and mix by hand to completely coat the onions.
  2. Transfer to a resealable container and gently press down onions to cover with juice.
  3. Add lid and refrigerate for at least 30 minutes to allow pickling time.
  4. Chef's Note: To develop the most flavor and better pickling, let onions sit overnight. Use on anything from garnishing hot dogs, tacos or salads, and everything in between.
