Lemon Artichoke Fettuccine Alfredo

Ingredients

  • 2 Medium lemons, zested and juiced
  • 4 Large globe artichokes
  • 2 1/2 cups Heavy Whipping Cream
  • 1 tbsp Fresh garlic cloves, finely minced
  • 12 oz Fettuccine Pasta
  • 2 oz Parmesan cheese, grated
  • 4 oz Salted Butter
  • 2 tbsp Fresh Italian parsley, finely chopped
  • 2 tbsp Roasted salted pistachios, finely chopped

Instructions

  1. Add juice from lemons to 1 quart of water. Working with 1 artichoke at a time, remove leaves and scrape "choke" from artichoke heart. Place trimmed heart in lemon water and soak until ready to cook. Repeat with remaining artichokes.
  2. Bring 3 quarts of water to a boil in a large pan. Add artichoke hearts to simmering water and cook 5 to 7 minutes, or until they are tender/firm. Remove artichoke hearts and slice. Save hot water for cooking pasta as sauce is being finished.
  3. In a separate pan add cream, garlic and lemon zest and bring to a simmer over low heat. Cook 8 to 10 minutes to infuse flavors.
  4. While sauce is simmering, bring the large pot of water back to a boil and cook pasta according to package directions.
  5. Add cheese to sauce and whisk together to melt. Whisk in chilled butter a few cubes at a time until fully incorporated.
  6. Add artichoke hearts to sauce and adjust seasoning with salt and freshly ground black pepper to taste.
  7. Serve over freshly cooked pasta and garnish with parsley and pistachios.
