Lebanese Style Fattoush Salad

Ingredients
- 1 tsp Peeled Garlic Cloves, minced fine or zested
- 1/4 cup Fresh lemon juice
- 2 cups Pita Bread, cut into small wedges or pieces
- 1 head Iceberg lettuce, chopped
- 1/2 cup Fresh radishes, thinly sliced or diced
- 1 cup Heirloom Tomatoes, diced small or chopped
- 1 cup Persian cucumber or English cucumber, diced small or thinly sliced
- 1/4 cup Fresh mint, minced or chiffonade
- 1/2 cup Fresh Italian parsley, chopped
- 1/3 cup Extra virgin olive oil, plus more as needed for dressing
Instructions
- Preheat oven to 350ºF. While oven is preheating, combine garlic and lemon juice in a small bowl and set aside to allow flavors to meld.
- Place pita bread pieces onto a sheet pan lined with parchment paper. Bake 10 to 20 minutes or until just crispy and nicely toasted.
- Allow pita to cool fully before adding to salad.
- In a large serving bowl or dish add lettuce, radishes, tomatoes, cucumbers, mint, parsley and pita pieces. Toss to combine everything.
- To make dressing, combine olive oil with lemon juice and garlic mixture, and whisk to just bring together.
- Pour dressing over salad, toss to coat and season to taste with salt and pepper.
