  • 1/2 cup Fresh Italian parsley, chopped
  • 1/3 cup Extra virgin olive oil, plus more as needed for dressing

Instructions

  1. Preheat oven to 350ºF. While oven is preheating, combine garlic and lemon juice in a small bowl and set aside to allow flavors to meld.
  2. Place pita bread pieces onto a sheet pan lined with parchment paper. Bake 10 to 20 minutes or until just crispy and nicely toasted.
  3. Allow pita to cool fully before adding to salad.
  4. In a large serving bowl or dish add lettuce, radishes, tomatoes, cucumbers, mint, parsley and pita pieces. Toss to combine everything.
  5. To make dressing, combine olive oil with lemon juice and garlic mixture, and whisk to just bring together.
  6. Pour dressing over salad, toss to coat and season to taste with salt and pepper.
