Lamb Nachos with Feta Serrano Crema

Ingredients
- 1 lb Ground lamb
- 1 tbsp Adams Reserve Chimichurri Seasoning
- 1 tsp Kosher salt
- 1 cup Crumbled feta
- 1 tbsp Garlic clove, minced
- 2 tbsp Lime, fresh juice
- 1 cup Sour cream
- 2 tbsp Fresh cilantro, chopped
- 1 Serrano pepper(s), roasted, seeded and stemmed
- 2 cups Queso asadero, shredded
- 1 cup Green onion, chopped
- 16 oz Tortilla chips
Instructions
- In a bowl combine lamb together with seasoning and salt. Mix well to combine set aside for 20 minutes to allow flavors to meld.
- Meanwhile, make sauce by adding feta cheese, garlic, juice, sour cream, cilantro and roasted pepper together. Blend until smooth, season to taste as needed with salt and pepper. (Add 1 tablespoon of water at a time as needed to thin sauce.) Set sauce aside for garnishing nachos.
- Preheat oven to 350ºF. In a non-stick skillet brown lamb until fully cooked. Remove from heat and set aside.
- Assemble nachos by adding chips to a sheet pan lined with parchment paper, sprinkle lamb, shredded cheese and green onions evenly. Bake 8 to 10 minutes or until cheese is fully melted.
- Drizzle sauce over nachos and serve immediately.
