Lamb Chops With Herbed Orzo And Spinach

Serves 4
Ingredients
- 2 tsp Extra virgin olive oil
- 1/2 tsp Kosher salt
- 1/2 tsp Ground black pepper
- 4 Garlic clove, minced
- 4 Lamb shoulder chops, cut 3/4-inch thick
- 1 1/2 cups Orzo pasta, uncooked
- 1 pt Grape tomatoes, cut in half
- 1/3 cup Sliced Olives, chopped
- 4 oz Tomato and basil feta crumbles
- 1/2 Red onion, cut into thin strips
- 1/4 cup Pine nuts
- 5 oz Baby Spinach
Instructions
- Place 2 quarts water in a 3-quart pot and bring to a boil over high heat.
- Meanwhile, combine olive oil, salt, pepper and garlic in a small bowl for rub.
- Press mixture into both sides of lamb and set aside.
- Cook pasta 2 minutes in boiling water; drain well, then toss with tomatoes, olives and cheese in a large bowl. Set aside.
- Heat a large, non-stick skillet over medium heat and cook lamb 5 to 7 minutes per side. Transfer to a plate and set aside.
- Leave drippings in skillet and return to heat.
- Add onion and pine nuts to skillet and sauté 2 to 3 minutes until onion is tender and nuts are golden.
- Add spinach and stir 30 to 60 seconds to wilt.
- Remove from heat and add to pasta mixture then toss to combine.
- Serve immediately with lamb chops.
