  • 1/3 cup Sliced Olives, chopped
  • 4 oz Tomato and basil feta crumbles
  • 1/2 Red onion, cut into thin strips
  • 1/4 cup Pine nuts
  • 5 oz Baby Spinach

Instructions

  1. Place 2 quarts water in a 3-quart pot and bring to a boil over high heat.
  2. Meanwhile, combine olive oil, salt, pepper and garlic in a small bowl for rub.
  3. Press mixture into both sides of lamb and set aside.
  4. Cook pasta 2 minutes in boiling water; drain well, then toss with tomatoes, olives and cheese in a large bowl. Set aside.
  5. Heat a large, non-stick skillet over medium heat and cook lamb 5 to 7 minutes per side. Transfer to a plate and set aside.
  6. Leave drippings in skillet and return to heat.
  7. Add onion and pine nuts to skillet and sauté 2 to 3 minutes until onion is tender and nuts are golden.
  8. Add spinach and stir 30 to 60 seconds to wilt.
  9. Remove from heat and add to pasta mixture then toss to combine.
  10. Serve immediately with lamb chops.
