King Ranch Chicken Casserole

Ingredients

  • 1 lb Fresh boneless, skinless chicken breasts, cooked and cubed
  • 16 oz Corn poblano chowder
  • 14.5 oz Canned, diced tomatoes with green chiles
  • 1/4 cup Fresh yellow onion, finely diced
  • 12 Corn tortillas, torn into bite-size pieces
  • 1 1/2 cups Shredded fat free mozzarella cheese

Instructions

  1. Preheat oven to 385°F.
  2. In medium bowl combine chicken, soup, tomatoes, and onion, stirring until well blended.
  3. In 13 x 9 x 2-inch baking pan, layer tortilla pieces, soup mixture, and cheese. Repeat for three layers.
  4. Bake 30 minutes or until hot and bubbling.
