Ingredients
- 1 tbsp Extra virgin olive oil
- 2 Keto Tortillas, large diced
- 1/2 cup Fully cooked bacon, medium diced
- 6 Large eggs
- 1 tbsp Whole milk
- 1/2 tsp Mi Tienda All Purpose Seasoning
- 1/3 cup Medium pico de gallo
- 2/3 cup Shredded Mexican Blend Cheese
Instructions
- Place a large skillet on medium-high heat. Add oil and swirl to coat pan. Add tortillas and cook 3 to 4 minutes or until they start to crisp and brown. Remove to a paper towel lined plate to drain.
- Reduce heat to medium and add bacon. Cook for 2 to 3 minutes, stirring constantly, until crisp and browned. Remove to a paper towel to drain.
- Beat eggs with milk and Mi Tienda seasoning. Add to pan and cook until firm, about 1 to 2 minutes. Add pico de gallo, bacon, and tortilla pieces and stir to combine.
- Sprinkle cheese over egg mixture and remove to a serving plate. Serve with additional tortillas and pico de gallo if desired.
