Keto Granola Parfait

Ingredients
- 2.2 oz Hazelnuts
- 1 cup Plain Greek yogurt, or as needed for each serving
- 1/2 tsp Sea salt
- 1 cup Unsweetened coconut, shredded
- 1 cup Walnuts, finely chopped
- 1 tbsp Coconut oil, melted or in liquid state
- 1 cup Pecans, finely chopped
- 1 Egg whites
- 4 tbsp Sugar free butter flavored syrup
- 1 tsp Ground cinnamon
- 1 tbsp Vanilla extract
- 1 cup Sliced almonds
Instructions
- Preheat oven to 350ºF. Line a sheet pan with parchment paper.
- In a large bowl combine nuts, coconut, coconut oil, vanilla, salt, syrup, cinnamon and egg white.
- Toss until well combined. Spread out evenly on prepared sheet pan.
- Bake for 10 to 20 minutes or until nuts are nicely toasted and golden brown. Remove from oven and cool completely to allow granola to firm up.
- To serve, break up granola into smaller pieces and serve over Greek yogurt. Garnish with fresh fruit if desired.
- Chef's Note: Granola will keep for up to a week covered in a cool dry place or you can refrigerate for up to 2 weeks.
