Keto Friendly Meringues

Ingredients
- 6 Large eggs, room temperature
- 1/4 tsp Cream of tartar
- 1 tsp Vanilla extract
- 1/4 tsp Kosher salt
- 1/4 cup Water
- 1/2 cup Sola Sweetener
- 1 pt Strawberries, quartered
Instructions
- Preheat oven to 200ºF. Line 2 baking sheets with parchment.
- Crack eggs and separate whites from yolks, discard yolks. Place egg whites in a mixing bowl along with cream of tartar, vanilla, and salt. Set aside.
- Combine water and Sola in a small saucepan over medium heat. Stir until Sola dissolves, about 2 to 3 minutes, then bring to a rapid boil. Once mixture reaches 240ºF (soft ball stage), remove from heat.
- Immediately start whipping the egg white mixture. When medium peaks form, slowly add hot syrup in a thin stream while continuing to whip.
- Beat just until the whites become glossy and smooth.
- Transfer to a piping bag and cut off the tip of the bag. Gently pipe the batter onto the lined sheet pans in big mounds.
- Bake 25 minutes then turn off oven and let meringues sit for 2 to 3 hours or up to overnight to dry.
- Serve with strawberries.
