Keto Friendly Meringues

Ingredients

  • 6 Large eggs, room temperature
  • 1/4 tsp Cream of tartar
  • 1 tsp Vanilla extract
  • 1/4 tsp Kosher salt
  • 1/4 cup Water
  • 1/2 cup Sola Sweetener
  • 1 pt Strawberries, quartered

Instructions

  1. Preheat oven to 200ºF. Line 2 baking sheets with parchment.
  2. Crack eggs and separate whites from yolks, discard yolks. Place egg whites in a mixing bowl along with cream of tartar, vanilla, and salt. Set aside.
  3. Combine water and Sola in a small saucepan over medium heat. Stir until Sola dissolves, about 2 to 3 minutes, then bring to a rapid boil. Once mixture reaches 240ºF (soft ball stage), remove from heat.
  4. Immediately start whipping the egg white mixture. When medium peaks form, slowly add hot syrup in a thin stream while continuing to whip.
  5. Beat just until the whites become glossy and smooth.
  6. Transfer to a piping bag and cut off the tip of the bag. Gently pipe the batter onto the lined sheet pans in big mounds.
  7. Bake 25 minutes then turn off oven and let meringues sit for 2 to 3 hours or up to overnight to dry.
  8. Serve with strawberries.
