Keto Chicken Fajita Quesadilla

Ingredients
- 1/2 lb H-E-B Seasoned Boneless Skinless Chicken Breasts for Fajitas
- 4 Keto tortillas
- 2 tbsp Fresh yellow onion, small diced
- 2 tbsp Fresh jalapeno pepper, stem and seeds removed, small diced
- 1/2 cup Shredded Mexican blend cheese
- 1/2 cup Queso quesadilla, shredded
- 1/2 Medium avocado, seed removed and sliced or large diced
- 2 tbsp Sour cream
- 1 Medium lime, cut into wedges
Instructions
- Preheat grill to medium-high.
- Spray chicken with non-stick spray. Place on grill and cook 6 to 7 minutes per side or until internal temperature is 165ºF.
- Remove chicken from grill, let rest 5 minutes then slice into thin strips.
- Place a large skillet on medium-high heat and spray with non-stick spray.
- Lay one tortilla in skillet and arrange half of chicken on top in a single layer. Sprinkle with half of onions, jalapeños, and each cheese. Place another tortilla on top and press down gently to hold in place.
- Cook quesadilla for 2 to 3 minutes, carefully flip and cook an additional 2 minutes. Transfer to a plate and keep warm. Repeat process for second quesadilla.
- Place avocado slices in center of quesadilla, and top with sour cream and a squeeze of lime.
