  • 1/2 cup Queso quesadilla, shredded
  • 1/2 Medium avocado, seed removed and sliced or large diced
  • 2 tbsp Sour cream
  • 1 Medium lime, cut into wedges

Instructions

  1. Preheat grill to medium-high.
  2. Spray chicken with non-stick spray. Place on grill and cook 6 to 7 minutes per side or until internal temperature is 165ºF.
  3. Remove chicken from grill, let rest 5 minutes then slice into thin strips.
  4. Place a large skillet on medium-high heat and spray with non-stick spray.
  5. Lay one tortilla in skillet and arrange half of chicken on top in a single layer. Sprinkle with half of onions, jalapeños, and each cheese. Place another tortilla on top and press down gently to hold in place.
  6. Cook quesadilla for 2 to 3 minutes, carefully flip and cook an additional 2 minutes. Transfer to a plate and keep warm. Repeat process for second quesadilla.
  7. Place avocado slices in center of quesadilla, and top with sour cream and a squeeze of lime.
