Keto Avocado Tostada Con Chorizo

Ingredients
- 2 Bakery pro keto tortillas
- 2 tbsp Extra virgin olive oil, divided use
- 2 Large eggs
- 1/2 tsp Fine crystals sea salt, divided use
- 1/4 tsp Ground black pepper
- 1 Large avocado, mashed with 1/4 tsp salt and 1 tbsp oil
- 1/4 cup San Luis chorizo, cooked and crumbled
- 2 tbsp Queso fresco
- 2 tbsp Cherry tomatoes, halved
- 2 tbsp Fresh cilantro, rough chopped
Instructions
- Preheat oven to 400ºF. Line a baking sheet with foil then place tortillas on foil and bake for 6 to 7 minutes. Set aside and keep warm.
- Place a medium skillet over medium-high heat and add 1 tablespoon of oil. Add eggs, season with 1/4 teaspoon salt and pepper and cook 2 to 3 minutes per side for over-easy doneness. Remove pan from heat.
- Spread half of mashed avocado on each tortilla and top with an egg.
- Finish with equal amounts of chorizo, queso fresco, tomatoes, and cilantro. Serve immediately.
