Kathy's Pronto Taco Soup

Serves 6

Ingredients

  • 2 tsp Olive oil
  • 1 cup Yellow onions, diced
  • 1 cup Red bell pepper, diced
  • 1 lb Extra Lean Ground Beef 96% Lean
  • 1 Hidden Valley Ranch Spicy Ranch Dip- Dressing Mix
  • 2 cups H-E-B Select Ingredients Chicken Broth
  • 1 No salt added whole kernel corn, drained
  • 1 Diced fire roasted tomatoes
  • 1 Low sodium taco seasoning
  • 1 No salt pinto beans
  • 1 Golden hominy

Instructions

  1. Place olive oil in a large pot and heat on medium-high.
  2. Sauté onions and peppers until onions are translucent. Spoon into a small bowl and set aside.
  3. In the same pot, cook ground beef until completely browned. Drain fat.
  4. Return cooked peppers and onions to pot and add dry ranch mix, chicken broth, corn, roasted tomatoes, taco seasoning, pinto beans and hominy.
  5. Bring to a simmer and serve.
