Instructions

  1. Place olive oil in a large pot and heat on medium-high.
  2. Sauté onions and peppers until onions are translucent. Spoon into a small bowl and set aside.
  3. In the same pot, cook ground beef until completely browned. Drain fat.
  4. Return cooked peppers and onions to pot and add dry ranch mix, chicken broth, corn, roasted tomatoes, taco seasoning, pinto beans and hominy.
  5. Bring to a simmer and serve.
