Unsaved Kansas City Style Spiedini

Ingredients

  • 2 lb Chicken breast, cut into approximately 1 to 2 inch pieces
  • 1/4 cup Extra virgin olive oil
  • 1 Small lemon, zest and juice
  • 3 cloves Garlic, minced fine or zested
  • 1 tbsp Dried basil
  • 1 tbsp Dried oregano
  • 2 tsp Kosher salt, plus more as needed to taste
  • 2 tsp Cracked black pepper, plus more as needed
  • 2 cups Panko breadcrumbs, plus more as needed
  • 8 Wooden skewers, or any skewer as needed

Instructions

  1. Place chicken pieces in a bowl along with all remaining ingredients except panko. Mix well to coat.
  2. Cover bowl with plastic wrap and refrigerate for at least 1 to 2 hours (or overnight for best results).
  3. Once marinated preheat oven to 400ºF.
  4. Dredge each piece of chicken in panko to lightly coat. Thread a few pieces of chicken onto each skewer.
  5. Arrange skewers on prepared sheet pan. Bake for 25 to 30 minutes or until internal temperature of chicken reaches at least 165ºF.
  6. Serve skewers over spaghetti or buttered noodles. Season to taste as needed.
