Ingredients
- 2 lb Chicken breast, cut into approximately 1 to 2 inch pieces
- 1/4 cup Extra virgin olive oil
- 1 Small lemon, zest and juice
- 3 cloves Garlic, minced fine or zested
- 1 tbsp Dried basil
- 1 tbsp Dried oregano
- 2 tsp Kosher salt, plus more as needed to taste
- 2 tsp Cracked black pepper, plus more as needed
- 2 cups Panko breadcrumbs, plus more as needed
- 8 Wooden skewers, or any skewer as needed
Instructions
- Place chicken pieces in a bowl along with all remaining ingredients except panko. Mix well to coat.
- Cover bowl with plastic wrap and refrigerate for at least 1 to 2 hours (or overnight for best results).
- Once marinated preheat oven to 400ºF.
- Dredge each piece of chicken in panko to lightly coat. Thread a few pieces of chicken onto each skewer.
- Arrange skewers on prepared sheet pan. Bake for 25 to 30 minutes or until internal temperature of chicken reaches at least 165ºF.
- Serve skewers over spaghetti or buttered noodles. Season to taste as needed.
