Kale &Tomato Frittata

Serves 4

Ingredients

  • 8 Large eggs, beaten
  • 1/2 cup Shredded parmesan cheese
  • 1/4 tsp Kosher salt
  • 1/2 tsp Ground black pepper
  • 2 tsp Olive oil
  • 2 cups Kale, chopped
  • 1 Fresh garlic clove, minced
  • 1/2 cup Tomato, chopped

Instructions

  1. Set oven to broil.
  2. In a medium bowl, blend eggs and Parmesan.
  3. Season with salt and pepper. Set aside.
  4. Set an oven safe pan over medium heat and add olive oil.
  5. Add kale and garlic to hot oil. Sauté quickly until kale is wilted.
  6. Toss in tomatoes and cook until softened.
  7. Gently add egg mixture and stir with a rubber spatula.
  8. Cook several minutes until egg mixture sets on the bottom.
  9. Place under broiler until top is lightly browned, about 3 minutes.
  10. Transfer to a cutting board and serve immediately.
