Kale &Tomato Frittata

Ingredients
- 8 Large eggs, beaten
- 1/2 cup Shredded parmesan cheese
- 1/4 tsp Kosher salt
- 1/2 tsp Ground black pepper
- 2 tsp Olive oil
- 2 cups Kale, chopped
- 1 Fresh garlic clove, minced
- 1/2 cup Tomato, chopped
Instructions
- Set oven to broil.
- In a medium bowl, blend eggs and Parmesan.
- Season with salt and pepper. Set aside.
- Set an oven safe pan over medium heat and add olive oil.
- Add kale and garlic to hot oil. Sauté quickly until kale is wilted.
- Toss in tomatoes and cook until softened.
- Gently add egg mixture and stir with a rubber spatula.
- Cook several minutes until egg mixture sets on the bottom.
- Place under broiler until top is lightly browned, about 3 minutes.
- Transfer to a cutting board and serve immediately.
